Potato Soup
In winter I would become a soup child. That I could eat all sorts of soups all week long, and it would never be too much for me.
It all starts with Lentil Soup, then Freekeh Soup, and then comes the very delicious Potato Soup. In this gray weather, the body, as well as spirit and soul demand something warming, and this creamy spicy soup is just the exact perfect hearty, cozy food in the cold season.
It’s getting freezing cold here, and in the evening we’re craving more hot warming meals. Besides, the color of this soup makes the sunshine inside! 😉
This comforting soup is a magnificent example of how some very basic, budget-friendly ingredients can be elevated into an incredibly cozy, fireside supper. Potatoes, carrots, and onions are all you need for this delicious soup!
Whether with chunks or totally mashed, it’s one of the most beloved dishes for sure.
This soup is perfect for dipping since it has the exact right consistency. To customize the consistency and texture of this potato soup recipe, you can serve it with tender chunks, or you can make a smooth potato soup using your hand mixer until it reaches the consistency you prefer. How wonderful, that we can enjoy this soup the way we like.
Yes, the warmth that you have to produce yourself, this is what I love the most about the winter season.
No wonder that I’m back in the soup fever, don’t you think so?! 😉
Ingredients:
– 400 g floury potatoes
– 300 g Carrots
– 1 big Onion
– 50 g Butter
– 50 ml Cream/ milk
– Salt & Pepper
– Nutmeg & Curry powder (to taste)
Directions:
1. Wash the vegetables, peel, and cube the potatoes and carrots.
2. Cut onions into small cubes.
3. In a large heavy pot melt the butter over medium heat.
4. Add onions and cook them until soft.
5. Add the vegetables, and cover with 1-liter water.
6. Bring to boil, lower heat, cover and simmer for about 15-20 minutes or until all the vegetables are tender.
* If needed add more water.
7. Using hand mixer coarsely crush the vegetables, but don’t mash them – you want chunks left.
8. Season it with salt, pepper, and your favorite spices.
9. Add enough milk or cream to thin to desired thickness, and cook it for another 5 minutes. & Done!
Tips from Kumin-
Floury potatoes are the best for making the perfect soup, since they have a high amount of starch, and they disintegrate well and fall apart while cooking. So the soup gets a lovely tasty texture.

Kartoffelsuppe
Im Winter bekomme ich Suppenfieber. Da könnte ich die ganze Saison über die verschiedensten Suppen essen und es würde mir nicht zu viel werden.
Alles beginnt mit Linsensuppe, und dann Freekehsuppe, und dann kommt einfach die ganz leckere Kartoffelsuppe. Bei diesem grauen Wetter verlangt sofort der Körper, als auch Geist und Seele nach etwas wohlig Wärmenden, und diese cremige, würzige Suppe ist genau das Richtige in der kalten Jahreszeit.
Es wird kühler und am Abend sehnen wir uns nach einer warmen Mahlzeit.
Außerdem, die Farbe dieser Suppe lässt die Sonne innerlich scheinen! 😉
Das Grundrezept lässt sich toll variieren. Kartoffelsuppe ist der beste Beweis dafür, dass die schlichten Dinge oft die besten sind: Kartoffeln, Zwiebeln, & Möhren, mehr braucht es erstmal nicht für eine Kartoffelsuppe!
Egal ob mit Kartoffelstücken, oder püriert, sie gehöhrt zu den beliebtesten Gerichten.
Die Suppe eignet sich perfekt zum Dippen. Sie hat genau die richtige Konsistenz für mich. Nicht zu dünn aber auch nicht zu dickflüssig. Dabei richtig schön würzig. Wenn Ihr lieber ein paar Stücke in der Suppe haben wollt, püriert die Suppe nur leicht. Wenn Ihr sie cremiger mögt, püriert sie völlig. Suppen sind einfach toll.
Wie gut, dass es so viele Varianten gibt.
Ja, die Wärme, die man selbst erzeugen muß, die mag Ich am Winter am liebsten.
Kein Wunder also, dass ich nun wieder im Suppenfieber bin, oder? 😉
Zutaten:
– 400 g geschälte, mehlige kochende Kartoffeln
– 300 g geschälte Karotten
– Eine große Zwiebel
– 50 g Butter
– 50 ml Sahne
– Salz & Pfeffer
– Muskat & Currypulver (nach Geschmack)
Zubereitung:
1. Das Gemüse waschen, putzen, und schälen
2. Zwiebel in kleine Würfel schneiden, Kartoffeln und Mohren auch würfeln.
3. Butter in den Topf geben und zerlassen.
4. Zwiebeln hinzufügen und bei mittlerer Stufe glasig anbraten.
5. Das ganze Gemüse mit dazu geben und mit 1 Liter Wasser ablöschen.
6. Den Deckel geben, aufkochen, und bei mittlerer Stufe etwa 15-20 Min. köckeln lassen.
* Bei Bedarf das mehr Wasser dazu geben.
7. Anschließend wird die Suppe mit Stabmixer püriert.
8. Mit den Gewürzen abschmecken.
9. Die Sahne hinzufügen, und noch mehr 5 Min. köcheln lassen. & Fertig!
Tipps von Kumin-
Cremige Kartoffelsuppen gelingen am besten mit mehlige kochenden Kartoffeln. Da sie einen hohen Stärkegehalt haben und zerfallen bereits beim Kochen. So bekommt die Suppe eine schöne Bindung.
