Lentil soup
It’s soup season! The temperatures are dropping so quickly, I just want to drop everything and make soup!
Nothing completes a cold winter evening like hands wrapped around a bowl of soup!
When it comes to arabic soups there’s nothing better than the arabic lentil soup! It’s in particular great for those cold winter days, it’s filling, soothing and light. ️
The traditional Lentil soup is a meal in itself.
It’s almost the official winter soup in many houses in the Levant! It’s nutritious, tasty and easy to make!
All you need is a squeeze of lemon juice and you are in for a bowl of comfort food at its best. It’s seasoned with a few of my favorite spices and plenty of freshly ground black pepper.
Lentils are perfect for making filling and flavorful vegetarian soups like this one 🙂
Prep time: 10 minutes
Cook time: 1 hour
Difficulty: easy
Ingredients:
– 200 g orange or red lentils
– 5 Tbsp olive oil
– 1 onion, finely chopped
– 2 Liter water
– Some Freekeh
– Cumin & Curry
– Salt & Pepper
For garnish and serving:
– Lemon juice
– Pita bread
Instructions:
1. Heat the oil in a pot, and saute the onions until soft.
2. Season it with salt and pepper.
3. Add the freekeh and roast it well.
* If you can’t find freekeh, then you can use a handful of rice, and it’s still delicious!
4. Add the lentils, and stir it well for a couple of minutes.
5. Add the water or the stock, and stir it well. Allow the soup to come to boil and then reduce to simmer for about an hour (or until the lentils are good cooked)
* You can adjust the water/stock amount depending on how thick you want the soup to be.
6. When cooked – add the curry & cumin, stir until it completely incorporated in the soup.
Add a squeeze of lemon juice and serve with lemon wedges 🙂
Tips from Kumin-
Don’t cook the lemon juice with the lentils, else the soup will become too sour!

Eure Lana ❤
Mouthwatering 🍽🍽🍲🍜

Yum! Love lentil soup! I’m Greek, and we make lentil soup, so we leave out the cumin and add soe Garlic. I like to add celery and carrots. In the end, instead of lemon juice, we add red wine vinegar. Same concept, though! Looks great!

This sounds (and looks!) soooo good! Any suggestions for things to eat with it to make it more filling? I’m looking for ideas to make after skiing and we will definitely be pretty hungry!

I always enjoy lentil soup, so it is nice to hear how you make it. There is a Greek version where the spices they add are dried rosemary, bay leaf, dried oregano and some tomato paste. Then at the end, for each portion, they drizzle olive oil and a little bit of red wine vinegar on top. Very delicious too! Love your photos.
